Tonight I made meatloaf wrapped in bacon. Fitting since I chose tonight to rearrange my original blog and title the entire page, “Bringing Home the Bacon”….and make every category about bacon. I seriously did not intend to do that….
Its a Cooks Illustrated recipe, and in a future blog I’ll talk all about Cooks Illustrated and how it changed my husband’s life forever. Meaning, he eats well….very, very well.
For some reason, the recipe tonight didn’t turn out as I remembered, but maybe my taste buds are sick. Keith stayed home sick today with mudd butt, the teenager was in the bathroom all night dry heaving, and I had a slight almost fainting spell but I didn’t faint. Just felt light-headed and sweaty for about an hour. I stopped peeling the potatos (for mashed potatoes…can’t have meatloaf without rib sticking mashed potatoes!) and laid down for a bit. Keith came over and sat on the couch next to me patting my leg. Obviously feeling bad that he passed his sickness onto me….or maybe he was patting me hoping I’d hurry up and feel better so I could finish making his dinner!!
Anyhow, tonight we ate meatloaf wrapped in bacon with mashed potatoes. Forgot the vege but since everyone was sick, it was a free-for-all-dinner. Meaning dinner is ready so come and get it whenever you feel like eating. The little one ate hers with a side of blueberries.
